Catherine’s Cowboy Caviar Recipe

What you need:

1 can black beans, drained and rinsed

1 can kidney beans, drained and rinsed

1 can corn, drained

1 red onion, diced

1 bell pepper, diced

1 avocado

3 roma tomatoes

1/2 cup fresh cilantro

4 cloves garlic, minced

1/4 cup olive oil

1/4 cup red wine vinegar

1 tsp cumin

1/2 tsp chili powder

Salt/pepper to taste

Tortilla chips

Steps: Start by combining the rinsed beans, corn, onion, and pepper in a large bowl. Slice the avocado and tomatoes in smaller pieces and add to the bowl. Chop the cilantro and sprinkle over the ingredients. Set aside. In a small bowl whisk together the garlic, olive oil, red wine vinegar and spices. Pour over the “caviar” and toss when ready to serve.
