Kate’s Cookie Recipe

2 tablespoons solid coconut oil
3 tablespoons pure maple syrup
1 large egg
1 teaspoon vanilla extract
2 cups almond flour (almond flour is better than almond meal for this recipe)
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup mini semi-sweet chocolate chips (Enjoy Life dairy free chocolate chips are great)
1. Preheat oven to 375 degrees & line a baking sheet with parchment paper or a silicone mat
2. Add coconut oil (microwave if very hard) and maple syrup to bowl and whisk until well mixed. Add egg and vanilla and whisk again.
3. In a separate bowl, mix almond flour, baking soda, and salt. Add dry ingredients to wet ingredients until combined. Stir in chocolate chips
4. Scoop mounded tablespoonfuls onto cookie sheet
5. Bake for 8-9 minutes (they are best a little on the paler side, only golden at the edges)
